In cold water, add shiitake mushrooms, cleaned anchovies (heads and guts removed), kelp, and onion. Boil over medium heat for about 10 minutes to make anchovy broth.

Remove the shiitake mushroom stems, anchovies, kelp, and onion from the broth. Slice the shiitake mushrooms and cut the bok choy into 4cm pieces.
