Remove the tentacles from the whole squid, remove the innards, and wash thoroughly.

Coarsely dice the onion, carrot, garlic chives, and ginger. Chop the nuts.

Squeeze the water from the tofu and crumble with a spoon.

Mix the finely chopped squid tentacles, diced vegetables, chopped nuts, finely minced green onion and garlic, salt, and starch with the crumbled tofu to make the stuffing.

Stuff the prepared filling into the cleaned squid.

Brush the stuffed squid with a mixture of lemon juice, sake, and ginger juice. Steam for about 10 minutes when the steamer is ready.
