Lightly wash the white kimchi, drain, and finely chop.
Mince the onion and garlic. Julienne the green onion.
Soak the microgreens in cold water, then drain well through cheesecloth.
Boil water with onion and green onion in a pot. Add the baby octopus, gently blanch, and slice.
Mix vinegar, soy sauce, sugar, honey, lemon, minced onion, and minced garlic to make the salad dressing.
Mix the white kimchi and baby octopus. Spread lettuce on a plate, top with the kimchi-octopus mixture, garnish with red chili and microgreens, and drizzle with salad dressing.
