Cut the kabocha squash into 1/8 pieces, scoop out the inside, and steam for 15β20 minutes.
Julienne the beef, season with garlic, soy sauce, and sugar, stir-fry, and let cool.
Julienne the bell pepper, cucumber, and red cabbage. Soak the radish sprouts in water. Julienne the apple and soak in sugar water. Trim the base of the enoki mushrooms and prepare in handy-sized bunches.
Mix minced garlic, minced onion, olive oil, sugar, vinegar, and salt evenly to make a sauce.
Peel the steamed kabocha squash, mash through a sieve, and mix with flour, water, and a little salt to make kabocha squash batter.
Grease a pan with olive oil, ladle the kabocha batter to make thin crepes. When cooked and cooled slightly, fill with the stir-fried beef and vegetables, roll up, and serve with the sauce.
