Julienne the potato and soak in water to remove starch. Julienne the onion, carrot, and green onion.

Trim the heads and tails of the bean sprouts.

When the water boils, add the prepared bean sprouts.

When the bean sprouts are cooked, drain and rinse in cold water.

Cut the garlic chives into 6cm lengths.

Grease a pan with oil, lightly stir-fry the bean sprouts, then add the julienned vegetables and stir-fry. Season with salt. Finally, add the garlic chives and stir-fry briefly.
